Banana/egg pancakes

 

Banana, 1 egg, dash of cinnamon and cap-full vanilla extract

Toppings: 1/2 cup slices strawberries, 1Tbsp sliced almonds, 1Tbsp pure maple syrup.

Snack: smoked salmon and laughing cow wedge on a cracked pepper flat bread.

Dinner: Jamie Eason's turkey meatloaf muffins.
  • 2lbs ground turkey
  • 3 egg whites
  • 1 cup quick cooking rolling oats
  • 1/2tsp cumin
  • 1/2tsp dried thyme
  • 2tsp dry yellow mustard
  • 2tsp black pepper
  • 1tsp chipotle pepper spice
  • 1tsp salt
  • 2tsp minced garlic
  • 2tsp garlic powder
  • a few dashes of dehydrated onion flakes 
Roll into 12 balls and place into muffin pan. Bake 375 degrees for 35-40 minutes

Mashed cauliflower. Steam some cauliflower until very soft. Place into a mixing bowl with 2oz fat free cream cheese and about 1/4 cup unsweetened almond milk. Sprinkle parsley, black pepper and garlic powder and mix on medium-high until completely mashed.

Home made gravy: Mix about 1/4 cup all purpose flour with some water to make it a soupy paste and set aside. Bring two cups vegetable broth to a boil. Slowly add the paste to the boiling broth and whisk until thickened. Take off the heat and let stand.
